Stuffed peppers

I like to make double of this recipe, cook half and freeze the other half for later!

Ingredients
4 bell peppers
1 1/2 pound of ground beef, cooked
1 cup cooked white rice
1 egg, lightly beaten
1/4 of a cup of chopped onion
1/2 cup of seasoned bread crumbs
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1/4 a cup of Parmesan cheese
1 24oz can of favorite pasta sauce
1/4 cup of white vinegar
More Parmesan

Directions
Preheat oven to 350 degrees F
Bring a large pot of water to boil and add the peppers, cooking long enough to soften. About 4 to 5 minutes.
Once they're soft, remove the peppers and put in a strainer, running cold water over them. When cool, place open side down in the strain to dry out a bit.
Combine the beef rice, egg, bread crumbs, onion, seasonings, and cheese together until well mixed.
Mix together the pasta sauce, and vinegar
Evenly fill the peppers with the beef and rice mix and place in rectangular baking dish, and top the tomato sauce mix.
Top each pepper with a bit more Parmesan cheese, and cook for 30-40 minutes.

 This can be made ahead of time and refrigerated. If so, cook for 60-80 minutes.
