BBQ chicken sandwhich

2-3lbs chicken thighs
1 bottle of your favorite BBQ sauce
Hamburger buns

Place the chicken and BBQ sauce into a crock pot and cook for 6 hours.
Remove chicken and allow to cool, then shred.
Place the shredded chicken back into the pot and mix well, cook 2 more hours.
Serve on buns!

Soda/Pop/Cola/Soft drink/What ever you want to call it.

I drink mostly water, but there are people in my house who love their soda. I like one every now and then too, especially on nights where we have hamburgers, hot dogs, or pizza. Not too long ago we decided to give the Aldi brand soda, GT Cola, a shot. The results? We like it better than Coca cola! It's also cheaper than Coca Cola, so that's a big bonus. A 12 pack costs $2.50. 24 packs of Coca Cola run around $7 per case around here, so that is a $2 saving.

Tacurritos


 These are basically just taco themed breakfast burritos.


Ingredients
4 Large tortillas
3 eggs per person
Lettuce
Salsa
Taco seasoning
Shredded cheese
8oz tub of Sour cream

Directions
Shred some lettuce
Scramble up the eggs with a couple tablespoons of taco seasoning.
Spoon some into a tortilla and top with desired ingredients, then fold closed.

Chicken and biscuit casserole

Ingredients
4 tablespoons of butter
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, finely minced
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon dried basil (or 1 tablespoon fresh)
1/2 teaspoon ground black pepper
1/2 cup all-purpose flour
4 cups chicken broth
1 1/2 cup frozen peas
4 cups diced, cooked chicken meat
    
3 cups buttermilk baking mix
3 teaspoons dried basil (or 3 tablespoon fresh)
1 cup milk

Directions
 Preheat oven to 350 degrees F and lightly grease a 9x13 inch baking dish.
 In a deep skillet melt the butter over medium-high heat. Cook the onion, celery, and carrots until tender.
 Add in garlic, sugar, salt, pepper, basil and cook 1 minute longer, then add in flour, cooking for an additional minute or so.
 Add in broth and peas, stirring constantly, and bring to a boil. Boil for about 1 minute, then lower heat to simmer for 5 minutes. Add in chicken, and pour into the prepared pan.
 In a medium bowl combine the final three ingredients and mix well to form a dough. Lightly flour the counter top and pat the dough out into a rough rectangle. Using your hands or rolling pin, form into a rectangle roughly the shape of the top of the pan and place on top. Don't worry about getting it on there in one large piece, it's easiest to cut into 3 sections and transfer those over.
 Bake in preheated oven for about 30 minutes, cover with foil and bake about 10 more minutes.


Alternatively for the biscuit topping, you can form into biscuits and place on top, rather than making a mat.

Stuffed peppers

I like to make double of this recipe, cook half and freeze the other half for later!

Ingredients
4 bell peppers
1 1/2 pound of ground beef, cooked
1 cup cooked white rice
1 egg, lightly beaten
1/4 of a cup of chopped onion
1/2 cup of seasoned bread crumbs
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1/4 a cup of Parmesan cheese
1 24oz can of favorite pasta sauce
1/4 cup of white vinegar
More Parmesan

Directions
Preheat oven to 350 degrees F
Bring a large pot of water to boil and add the peppers, cooking long enough to soften. About 4 to 5 minutes.
Once they're soft, remove the peppers and put in a strainer, running cold water over them. When cool, place open side down in the strain to dry out a bit.
Combine the beef rice, egg, bread crumbs, onion, seasonings, and cheese together until well mixed.
Mix together the pasta sauce, and vinegar
Evenly fill the peppers with the beef and rice mix and place in rectangular baking dish, and top the tomato sauce mix.
Top each pepper with a bit more Parmesan cheese, and cook for 30-40 minutes.

 This can be made ahead of time and refrigerated. If so, cook for 60-80 minutes.

Breakfast burritos



Ingredients
3 eggs per person (so a dozen for us)
1 jar of salsa
Shredded cheese
4 Large tortillas

Directions
Scramble up all of the eggs
Heat the tortillas in a hot oven for 1 minute or so and place on a plate.
Layer some of the eggs across one side of it, then top with as much salsa and cheese as desired.
Fold up one side of the tortilla over the eggs along a 'long' side, then fold over the ends, then roll. Plenty of videos can be found on youtube for this.

Sausage soup

This very filling soup left plenty of left overs, to make it a little heartier you could add more potatoes. 

Ingredients
2 pounds spicy pork sausage, crumbled (or half spicy/half sweet)
2 tablespoons vegetable oil
1-1/2 cups diced onion (one large onion)
2-1/2 teaspoons minced garlic
1/4 cup chicken bouillon powder
8 cups water
4 potatoes, cut into small pieces
1 cup heavy cream
2 teaspoons of oil from the cooked sausage
2 tablespoons of flour
4 cups sliced kale
    

Directions
Preheat the oven to 300 degrees F.
Line 2 baking sheets with foil and crumble the sausage onto them, then bake for 20-30 minutes, until done.
Heat oil in a skillet over medium heat and add onions.
While the onions are starting to cook, add the water, potatoes, and bouillon into a pot and set on to cook.
Cook onions until they are starting to get a bit translucent, then add the garlic and cook for a minute or so until the garlic fragrance is starting to get strong. Add a 2 teaspoons of oil from the sausage to the pan, and add 2 tablespoons of flour and mix well, cooking on low for about 4 minutes and add the cream, mixing well.
While the onion mixture is cooking, drain the sausage and add to the pot with the potatoes.
Once the cream mixture is slightly thickened, add to the potatoes along with the kale. 
Cook 3 minutes longer, or until the kale is your desired consistency and serve.
